It’s that time of the year again – Slow Cooker Season
Time when the weather starts cooling down outside, our thoughts drift to all that yummy comfort food, designed to warm our tummies.
It is also a time where we Mums and Dads are ferrying our kids around to sport training, dance lessons, music lessons and play dates.
Time is such a huge factor in our lives, sometimes we want at least one part of it to be easy…..
That’s where this recipe comes in.
If you have the afternoon from hell coming up, sometimes it’s a wise decision to think about dinner early and hopefully have it all done, by the time dreaded witching hour descends.
This is where every Mum and Dads saviour, the “Slow Cooker” comes into play.
This recipe was such a huge hit in our house the other night and it all was prepared with minimal fuss and minimal preparation time.
This recipe is courtesy of Better Homes and Gardens Magazine, with a few of my own tweaks thrown in..
Slow Cooker Beef Curry
2 brown onions
3 medium potatoes
2kg casserole steak
1.5 cups chicken stock
2 X 420g cans condensed tomato soup
400ml can coconut cream
1 1/2 tblsp of curry powder
1 tblsp brown sugar
In the morning……..
Chop up all your veges into bite sized pieces
Cut up your meat into bite sized cubes
Toss your beef pieces in some plain flour
Put your meat and veges into your slow cooker
Stir in your curry powder
Add your stock, sugar and tomato soup
Pop your lid on
Turn your slow coooker on low and cook for approximately 6-7 hours
Go to work and school…….
When you get home……
Add your can of coconut cream, stir and cook for another 20 minutes
Serve with some boiled rice and enjoy
