Slow Cooker Beef Chilli
As we prepare to batten down the hatches and embrace the cold front that is due to hit the eastern states this week. I thought I would share with you the perfect recipe to warm your insides and have your home smelling delicious. So it’s well and truly time to get out the slow cooker.
I popped this recipe on this morning before I left for work. Walking back into the house this afternoon, the wonderful smells that greeted me, knowing that dinner was all ready, had me feeling all toasty and relaxed immediately.
What better way to embrace the winter chill than with a bowl of slow cooker Beef Chilli.
2kg of regular beef mince
2 tins crushed tomatoes
2 tubs tomato paste
1 large can of red kidney beans
1 can of corn kernels
2 tsp of minced garlic
1 chopped onion
Chilli powder (to your taste)
2 bags of plain corn chips
Thin slices of chilli to decorate
In your slow cooker put your mince, onion, garlic, tomatoes, tomato paste, corn and strained kidney beans.
Sprinkle in your chilli powder and stir through.
Slow cook your chilli for approximately 8 hours, stirring intermittently to break up the mince and make it thick and hearty.
Serve over a bed of corn chips, top with sour cream and slices of fresh chilli to garnish.
